Kachumbar Salad
This salad is usually served as a side dish with rice. It is cooling, fresh and light.
Ingredients
2 cucumbers, finely cubed 2 tomatoes, finely cubed 1 small onion, finely cubed 1 green chilli, de-seeded and finely chopped Salt to taste 2 tbsp lemon juice (one small Asian lemon, or ½ a large Mediterranean lemon) Handful of fresh coriander leaves, chopped |
Method
Chop all the ingredients and mix together in a bowl with the lemon juice and salt. Top with coriander leaves. |
