Green Chutney Recipe
This thick sauce tastes wonderful with rice or parathas, or it can be mixed with yogurt for a delicious raita.
Ingredients Coriander leaves (1 generous handful) Mint leaves (fresh, 1 generous handful) 4 cloves of garlic 2 tsp cumin 3 green chillis Salt to taste Options You can use only coriander or only mint, but the mint alone turns rather black. Instead of plain water, ½ cup tamarind juice can be used, for a thinner and refreshing chutney. |
Method Place all the ingredients in the blender with about 2-3 tbsp water. Blend patiently – it will eventually come together, but with so little water it will take some time. Make sure the garlic has properly blended, not leaving big lumps. |
