Carrot Pickle Recipe
A very easy and quick pickle - it's not fermented. It is only called a pickle because it uses the traditional pickle spices, and is served as a side dish.
Ingredients 2 cups peeled and grated carrots 2 tbsp lemon juice 3 green chillis, de-seeded and finely chopped 1 tbsp oil 3-4tsp Pickle Spice Mix (see below) Salt to taste |
Method Mix all the ingredients together well. Taste to check for the balance of flavours. It tastes best if you leave it to marinade for a few hours before serving. |
Pickle Spice Mix (Achar Masala)
This mix contains the basic spices used in a Pakistani pickle, which is where the name comes from. However, it is so tasty and versatile, and goes particularly well with vegetable dishes. Unlike the more well-known garam masala, it does not have a warming effect in the body, making it ideal for summer.

Ingredients 2 tbsp kalonji (onion seeds) 2 tbsp fennel seeds (sonf) 3 tbsp coriander seeds |
Method Grind all the seeds together in a spice grinder or with a pestle and mortar. This tastes best if only coarsely ground, so that some small pieces of the seeds are visible. It will keep well in a glass jar for a few weeks. |
